Strawberry and rhubarb compote

Ingredients

  • 250g red rhubarb
  • 150g strawberries
  • 80g Cavendish & Harvey Strawberry Filled Drops
  • 1 tbsp lemon juice
  • 250ml water

 

Preparation

  • Wash the strawberries and rhubarb. Remove the green parts and halve the berries. Cut the unpeeled rhubarb into approximately 2cm pieces.
  • Place half of the strawberries, rhubarb, Cavendish & Harvey Strawberry Filled Drops, and lemon juice in a saucepan with the water and simmer over medium heat for about 3 minutes, stirring regularly, then simmer until the rhubarb is soft.
  • Mix in the remaining strawberry pieces. Then let the compote cool and serve chilled.
